Supplies needed:
- Mini potatoes, 1 bag or as many as desired
- Microwave
- Microwave-safe bowl
- Olive oil, other oil, or melted butter
- Spices, cheese, or other desired toppings
Procedure:
1. Cut the mini potatoes in half. They cook better when cut into smaller pieces. They also absorb more of the oil and toppings this way since more surface area is exposed.
2. Add the mini potatoes to the microwave-safe bowl. It is best to arrange them in a single layer if possible, meaning that they are not stacked on top of each other. Potatoes stacked on top of other potatoes may take longer to cook since heat comes from the sides of the microwave. See this article for more information on how microwave cooking works.
3. Drizzle the oil or melted butter on top of the potatoes. The oil makes the potatoes moist, helps them to cook more thoroughly, and improves the ability of the toppings to stick to them.
4. Add your other toppings. These can be spices, sauces, and/or cheese. I personally love to top my potatoes with Frank's RedHot, garlic powder, and dill. Sage and rosemary can also be delicious on mini potatoes.
5. Microwave on high for a total of 4-7 minutes. Pause and stir well every 30 seconds. Even though they are mini and cut in half, they can still heat very unevenly since they are cooked in a microwave. So stirring is important. See this article for more information on microwave cooking.
NOTE: Covering the bowl, such as with a paper towel or a microwave-safe plate, may speed the cooking up and add a steaming effect. But this covering is optional.
6. Let cool. The bowl will be hot.
And enjoy! It's that simple.
